Roasted Chili-Corn Salsa
1/2 small pob...Here it is:<br />Roasted Chili-Corn Salsa<br />1/2 small poblano chile pepper ( poblano is also known as a pasilla - the pasilla being when its left on the vine to turn red)<br />1 small jalapeno, seeded and chopped<br />3 tsp. olive oil<br />kosher salt<br />1 cup fresh corn kernels (2 ears each) or one cup thawed frozen--i used tjoe's roasted frozen corn.<br />2 tbl. chopped cilantro<br />2 tbl. chopped red onion<br />2 tbl. lime juice<br />1/2 tsp. sugar..<br /><br />1. preheat girll to med. high.. or u can just throw the pepper on the stove burner and char it and rotating it as it gets charred. Take off and I put it in a paper bag so that the steam helps the skin to come off). Cool slightly, peel under running water and chop.<br />2. If using dresh corn, bring a small pot of water to boil and then add corn and cook 2-3 min.<br />3. mix corn,ponlnfo, jalapeno,cilantro and red onion in bowl.. stir in remaining 2 teaspoon olive oil , lime juice, sugar and 1/2 tsp. salt.<br />If u want spice, don't take out all the seeds..
